Smoky Brown Butter Roast Chicken

Smoky Brown Butter Roast Chicken

Ingredients

  • 1 (4- to 5-pound) whole roasting chicken

  • 2 Tbsp smoked paprika

  • 3-4 Tbsp Black & Bolyard Original Brown Butter

  • 2 large lemons (sliced into thick rounds)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 1/2 tsp salt

  • 1/2 tsp pepper

Directions

Preheat the oven to 350 ºF

Pat the chicken dry with paper towels (this allows the skin to get crispy) and make sure to remove the giblets and neck bone from inside the chicken cavity.

Combine your spice mixture.

Mix together the smoked paprika, half of butter (melted) garlic powder, onion powder, salt, and pepper. Spread over the entire surface of the chicken (you can use a pastry brush to evenly spread the mixture) and place the chicken in a shallow baking pan on top of lemon slices.

Bake for approximately 1 hour to 1 hour and 15 minutes. You may need to adjust total cooking time depending on how big your chicken is. Insert an instant-read thermometer into the thickest part of the thigh, near the bone, and it should read 165ºF.

To double check that your chicken is done, insert a knife tip into both the chicken breast and thigh. If the juices run clear (not pink) your bird is done.

Let your chicken rest for about 10 minutes before carving. In the meantime, brush remaining brown butter all over the surface. Add more seasonings to taste. Carve your chicken up and enjoy.
